Instructions
- Melt the dark chocolate in a microwave-safe bowl and let it cool slightly.
- In a food processor, combine avocados, melted chocolate, cocoa powder, honey, salt, and instant coffee. Blend until smooth.
- Add coconut milk to the mixture and blend again until creamy.
- Spoon the mousse into glasses and refrigerate for at least 1 hour, preferably 3 to 4 hours.
- For the bananas, melt coconut oil in a skillet and add sliced bananas and brown sugar. Cook until browned on both sides.
- Add coconut rum and vanilla to the skillet and simmer for 1 minute.
- Serve the warm bananas over the chilled mousse and sprinkle with toasted coconut.
