Dark Chocolate Avocado Mousse with Coconut Caramelized Bananas

Ingredients

The mousse

  • 4 large ripe avocados
  • 4 ounces dark chocolate
  • ¼ cup dark cocoa powder
  • 4 tablespoons honey
  • 1 tablespoon vanilla extract
  • ½ teaspoon salt
  • 1 tablespoon instant coffee
  • cup canned coconut milk

Coconut caramelized bananas

  • 4 ripe bananas
  • 2 tablespoons coconut oil
  • 2 tablespoons brown sugar
  • ¼ cup coconut rum
  • 1 tablespoon vanilla extract
  • 2 tablespoons toasted coconut

Instructions

  1. Melt the dark chocolate in a microwave-safe bowl and let it cool slightly.
  2. In a food processor, combine avocados, melted chocolate, cocoa powder, honey, salt, and instant coffee. Blend until smooth.
  3. Add coconut milk to the mixture and blend again until creamy.
  4. Spoon the mousse into glasses and refrigerate for at least 1 hour, preferably 3 to 4 hours.
  5. For the bananas, melt coconut oil in a skillet and add sliced bananas and brown sugar. Cook until browned on both sides.
  6. Add coconut rum and vanilla to the skillet and simmer for 1 minute.
  7. Serve the warm bananas over the chilled mousse and sprinkle with toasted coconut.
