Ingredients

The rice and vegetables

  • 3 cups riced cauliflower
  • cup chopped carrots
  • ¼ bell pepper chopped
  • ½ cup diced zucchini

The seasonings and extras

  • 1 tablespoon sesame oil
  • 1 teaspoon garlic
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon tamari
  • 1 tablespoon lime juice
  • 1 tablespoon siracha
  • cup scallions
  • cup basil leaves
  • 1 tablespoon chopped peanuts

The protein

  • 2 eggs

Instructions

  1. Heat sesame oil in a large skillet over medium high heat.
  2. Add the carrots, zucchini, and bell pepper, and stir for 1-2 minutes until they begin to soften.
  3. Add garlic and ginger, then stir in the cauliflower rice.
  4. Season with tamari and lime juice, and let cook for 2 minutes.
  5. Push the mixture to one side of the pan and crack the eggs into the other side.
  6. Scramble the eggs and mix them into the cauliflower once cooked.
  7. Remove from heat and stir in siracha, scallions, and basil leaves.
  8. Serve topped with chopped peanuts and lime wedges if desired.
