Ingredients

Sweet Potato Toast

  • 1 large sweet potato, sliced lengthwise into 1/4” to 1/3″ slices
  • 1 teaspoon avocado oil

Avocado

  • 1 unit avocado, mashed

Pico Avocado Toast Topping

  • ½ cup diced cherry tomato
  • 1 tablespoon diced red onion
  • 1 teaspoon fresh chopped cilantro
  • 1 teaspoon lime juice
  • to taste salt

Everything Bagel Avocado Toast Topping

  • 1 tablespoon everything bagel seasoning

Fruity Avocado Toast Topping

  • ½ cup blueberries
  • 4 units strawberries, sliced
  • 1 teaspoon chia seeds

Soft Boiled Egg Avocado Toast Topping

  • 2 units soft boiled eggs

Bacon Avocado Toast Topping

  • 2 strips bacon, cooked and diced

Instructions

  1. Preheat the oven to 425°F.
  2. Brush both sides of sweet potato slices with avocado oil.
  3. Place the slices on a parchment paper lined baking sheet.
  4. Bake for 5 minutes, then flip the slices and bake for another 5 minutes.
  5. Remove from the oven and let them rest.
  6. Mash the avocado in a small bowl.
  7. Top each sweet potato slice with a tablespoon of mashed avocado and your choice of toppings.
