Instructions
- Preheat the oven to 425°F.
- Brush both sides of sweet potato slices with avocado oil.
- Place the slices on a parchment paper lined baking sheet.
- Bake for 5 minutes, then flip the slices and bake for another 5 minutes.
- Remove from the oven and let them rest.
- Mash the avocado in a small bowl.
- Top each sweet potato slice with a tablespoon of mashed avocado and your choice of toppings.
