Instructions
- Preheat the oven to 425 degrees.
- Slice the sweet potato into ¼ inch thick slices.
- Coat both sides of the sweet potato slices with olive oil.
- Line a sheet pan with parchment paper and place the sweet potato slices on it.
- Bake for 5 minutes, flip, and bake for an additional 5-8 minutes until tender.
- Once cooled, load each slice with mashed avocado.
- Top with cherry tomatoes, cilantro, strawberries, and blueberries.
