Sweet Potato Toast Three Ways

Instructions
- Preheat the oven to 350℉ and bake the sweet potato for 10 minutes to soften it.
- Remove the sweet potato and slice it lengthwise into ¼ inch slices.
- Place the slices and desired amount of chickpeas on a sheet pan and bake for 20-30 minutes until tender.
- While the toasts are baking, prepare the toppings by cutting the avocado and fruits, and cooking the egg as desired.
- Remove the toasts from the oven and top with avocado, hummus, chickpeas, seeds, and the cooked egg.
