Ingredients

The base

  • 1 sweet potato sweet potato

The toppings

  • ½ small avocado
  • 1 egg egg
  • 1-2 Tbsp hummus
  • to taste chickpeas
  • to taste seeds/nuts

Instructions

  1. Preheat the oven to 350℉ and bake the sweet potato for 10 minutes to soften it.
  2. Remove the sweet potato and slice it lengthwise into ¼ inch slices.
  3. Place the slices and desired amount of chickpeas on a sheet pan and bake for 20-30 minutes until tender.
  4. While the toasts are baking, prepare the toppings by cutting the avocado and fruits, and cooking the egg as desired.
  5. Remove the toasts from the oven and top with avocado, hummus, chickpeas, seeds, and the cooked egg.
