Caribbean Coleslaw

Ingredients

  • 1 cup shredded white cabbage
  • 1 cup shredded carrots
  • 1 can (8 oz) crushed pineapple, drained
  • ½ cup shredded coconut (unsweetened)
  • 1 medium onion, minced/finely chopped
  • 2 tbsp golden raisins
  • 2 tbsp brown sugar
  • 1 tbsp white vinegar
  • ¾ cup mayonnaise

Instructions

  1. In a large bowl, mix the sugar and vinegar until dissolved.
  2. Add the mayonnaise to the mixture.
  3. Incorporate all remaining ingredients into the bowl.
  4. Chill in the refrigerator for at least one hour before serving.
