Ingredients

The Slaw

  • 1 cup diced pineapple
  • 12 to 14 ounces shredded cabbage
  • ¾ to 1 cup red cabbage
  • cups broccoli slaw or shredded carrots
  • cup chopped red onion or shallot
  • 2 to 3 pieces green onions (diced)
  • cup finely diced cilantro
  • 1 piece jalapeño (optional)

The Dressing

  • 2 tablespoons pineapple juice
  • ½ to ⅔ cup mayonnaise or Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon apple cider vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon light olive oil (optional)
  • dash hot sauce (optional)

Instructions

  1. Combine slaw ingredients in a large bowl.
  2. In a separate bowl, whisk together the dressing ingredients until smooth.
  3. Pour the dressing over the slaw and toss to coat.
  4. Refrigerate for at least 3 hours to marinate.
  5. Add extra red cabbage and olive oil before serving, then toss again.
