Beef Broccoli Stir Fry

Ingredients

Beef Marinade

  • ¼ teaspoon baking soda
  • ¾ teaspoon cornstarch
  • ¼ tablespoon soy sauce
  • ½ tablespoon oyster sauce
  • 1 tablespoon oil
  • 1 pound boneless skirt flap or round steak

Sauce

  • 2 tablespoons soy sauce
  • ¼ cup oyster sauce
  • ½ cup chicken stock
  • 1 cup water
  • 2 tablespoons cornstarch
  • 2 tablespoons brown sugar
  • 3 cloves garlic
  • 1 teaspoon minced ginger
  • 1 pound broccoli
  • ½ medium onion, chopped
  • 1 tablespoon dry sherry (optional)

Instructions

  1. Combine baking soda, cornstarch, soy sauce, oyster sauce, and oil in a small bowl.
  2. Slice the beef against the grain and mix with the marinade. Cover and refrigerate for at least 1 hour or overnight.
  3. In another bowl, combine soy sauce, sherry, water, chicken stock, oyster sauce, cornstarch, and brown sugar for the sauce.
  4. Heat oil in a wok, add the marinated beef, and cook for about 2 minutes until desired doneness. Remove and keep warm.
  5. Stir fry broccoli and onion for 2 minutes, then add garlic and ginger, cooking for another 2-3 minutes.
  6. Add the sauce mixture to the wok, cook and stir for about 2 minutes, then return the beef to the wok.
  7. Serve over rice.
