Broccoli Beef Stir Fry

Ingredients

The beef

  • lbs flank steak, sliced into thin pieces
  • ¼ cup tapioca flour
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 2 tbsp ghee (or avocado oil)

The sauce

  • ¼ cup coconut aminos
  • ¼ cup water
  • 2 inches fresh ginger, grated (about 1 tbsp)
  • 4 cloves garlic, minced

The vegetables

  • 4 cups broccoli florets
  • 6 pieces green onions, chopped into 1 inch pieces
  • to taste red pepper flakes (optional)

Instructions

  1. Mix tapioca flour, sea salt, and pepper in a shallow dish.
  2. Slice the steak thinly, add to the dish, and toss to coat.
  3. Whisk together all sauce ingredients in a small bowl and set aside.
  4. Heat ghee in a large skillet over medium-high heat.
  5. Add the steak in a single layer and cook for about one minute until browned, then flip and cook for another minute.
  6. Remove the steak and set aside on a plate.
  7. Add the sauce to the pan, scraping the bottom, and let it bubble for a couple of minutes on low heat.
  8. Add broccoli and green onions, increase heat to medium, and stir-fry for 3-4 minutes.
  9. Return the beef to the pan and stir to coat everything in the sauce.
  10. Serve as is or with rice or cauliflower rice.
