Beef and Broccoli Stir Fry

Ingredients

The marinade

  • 1 egg egg white
  • 1 tablespoon rice wine or mirin
  • 2 tablespoons cornstarch
  • ¼ teaspoon coarse salt

The beef and sauce

  • 1 pound beef top loin or flank steak
  • ½ cup unsalted beef stock
  • 2 tablespoons oyster sauce
  • 2 tablespoons rice wine or mirin
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon toasted sesame oil
  • 3 tablespoons oil

The vegetables

  • 1 medium head broccoli
  • 2 inches ginger, peeled and minced
  • 2-3 cloves garlic, peeled and minced

For serving

  • as needed cooked rice
  • as needed sesame seeds
  • as needed sliced green onion

Instructions

  1. Whisk together egg white, rice wine, cornstarch, and salt in a bowl, then add beef strips and marinate for 30 minutes.
  2. In another bowl, mix beef stock, oyster sauce, rice wine, soy sauce, brown sugar, and sesame oil, then whisk in remaining cornstarch until smooth.
  3. Heat oil in a skillet or wok over medium-high heat and sauté beef strips in batches until browned and crispy, then remove and set aside.
  4. Sauté broccoli florets in the same skillet for 3-4 minutes until tender, then add ginger and garlic and sauté for an additional 30-60 seconds.
  5. Pour the sauce into the skillet and simmer until thickened, then serve over rice topped with sesame seeds and green onion.
