Instructions
- Butter the sides and bottom of a 9x13 pan and set aside.
- Place the bread cubes in a large mixing bowl.
- In a separate bowl, whisk the eggs and add the pumpkin puree until smooth.
- Mix in the pumpkin spice egg nog, followed by the brown sugar, pumpkin pie spice, cinnamon, salt, and vanilla.
- Pour the mixture over the bread cubes and gently toss to cover them.
- Let the mixture sit for 2-3 minutes, then toss again to ensure all bread cubes are soaked.
- Transfer the mixture to the prepared pan, cover, and refrigerate overnight.
- In a small bowl, combine the brown sugar, white sugar, flour, pumpkin pie spice, and cinnamon.
- Grate the cold butter or cut it into small chunks, then crumble it into the sugar mixture.
- Cover and refrigerate the topping overnight.
- In the morning, take the pan out and let it sit at room temperature while preheating the oven to 350°F.
- Uncover the pan and sprinkle the crumb topping evenly over the top.
- Bake for 45-55 minutes until puffed and golden.
- Let cool for 10 minutes, cut into squares, and serve with butter, maple syrup, and whipped cream.
