Ingredients

The French Toast

  • 1 loaf French Bread
  • 6 large eggs
  • 2 ½ cups milk
  • 1 cup pumpkin puree
  • ¾ cup granulated sugar
  • 2 tablespoons vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

The Streusel Topping

  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup cold butter

Instructions

  1. 1. Spray a 9 x 13-inch baking pan with cooking spray and add torn or cubed French bread.
  2. 2. In a bowl, mix eggs, milk, pumpkin puree, sugar, vanilla, cinnamon, and nutmeg, then pour over the bread.
  3. 3. Cover and refrigerate for several hours or overnight.
  4. 4. In another bowl, combine flour, brown sugar, cinnamon, nutmeg, and salt, then cut in butter until crumbly.
  5. 5. Refrigerate the streusel mixture until ready to use.
  6. 6. Preheat the oven to 350°F. Remove the French toast from the refrigerator and sprinkle the streusel on top.
  7. 7. Bake for 45-55 minutes until set and golden brown.
  8. 8. Serve warm with syrup if desired.
