Instructions
- Preheat the oven to 300°F and set a baking sheet inside to keep the French toast warm.
- In a wide baking dish, whisk together the eggs, pumpkin puree, maple syrup, cinnamon, nutmeg, ginger, and salt until smooth.
- Mix in the Greek yogurt and milk carefully.
- Heat a nonstick skillet or griddle over medium heat and coat with butter, oil, or nonstick spray.
- Dunk slices of bread into the custard mixture, ensuring both sides are well coated.
- Cook the bread in the skillet for about 3 to 4 minutes on one side until golden brown, then flip and cook for an additional 2 minutes.
- Remove the cooked slices to the baking sheet in the oven to keep warm and repeat with the remaining bread.
- Serve warm with desired toppings.
