Ingredients

The custard

  • 3 large eggs
  • ¾ cup pumpkin puree
  • 2 tablespoons pure maple syrup
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon kosher salt
  • 1 cup vanilla nonfat Greek yogurt
  • 1 cup nonfat milk

The bread

  • 12 slices Texas toast or other thickly sliced bread

For cooking

  • as needed butter, canola oil, or nonstick spray

For serving

  • as desired pure maple syrup
  • as desired butter
  • as desired powdered sugar

Instructions

  1. Preheat the oven to 300°F and set a baking sheet inside to keep the French toast warm.
  2. In a wide baking dish, whisk together the eggs, pumpkin puree, maple syrup, cinnamon, nutmeg, ginger, and salt until smooth.
  3. Mix in the Greek yogurt and milk carefully.
  4. Heat a nonstick skillet or griddle over medium heat and coat with butter, oil, or nonstick spray.
  5. Dunk slices of bread into the custard mixture, ensuring both sides are well coated.
  6. Cook the bread in the skillet for about 3 to 4 minutes on one side until golden brown, then flip and cook for an additional 2 minutes.
  7. Remove the cooked slices to the baking sheet in the oven to keep warm and repeat with the remaining bread.
  8. Serve warm with desired toppings.
