Ingredients

The base

  • 3 large eggs
  • ½ cup skim milk
  • ¾ cup canned pumpkin
  • 1 teaspoon pumpkin pie spice

The bread

  • 10 slices light wheat bread

Instructions

  1. In a large shallow bowl, whisk together the eggs, milk, pumpkin, and pumpkin pie spice until well mixed.
  2. Mist a griddle or skillet with cooking spray and heat to medium-low to medium.
  3. Dip each slice of bread into the egg mixture, coating both sides and shaking off excess.
  4. Place the coated bread on the pan and cook for 1-2 minutes until golden brown, then flip and cook for another 1-2 minutes.
  5. Repeat the process with remaining bread, misting the griddle with cooking spray between batches.
