Instructions
- In a large shallow bowl, whisk together the eggs, milk, pumpkin, and pumpkin pie spice until well mixed.
- Mist a griddle or skillet with cooking spray and heat to medium-low to medium.
- Dip each slice of bread into the egg mixture, coating both sides and shaking off excess.
- Place the coated bread on the pan and cook for 1-2 minutes until golden brown, then flip and cook for another 1-2 minutes.
- Repeat the process with remaining bread, misting the griddle with cooking spray between batches.
