Ingredients

The batter

  • 3 large eggs
  • ¾ cup milk
  • ½ cup pumpkin puree
  • 1 tablespoon light brown sugar
  • teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • Butter for griddle or pan

The bread

  • 10 slices brioche bread

For serving

  • to taste maple syrup
  • to taste butter
  • to taste powdered sugar

Instructions

  1. Preheat the electric griddle.
  2. In a large mixing bowl, whisk together eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, and pumpkin pie spice.
  3. Butter the preheated griddle.
  4. Dip both sides of each slice of bread into the egg mixture, allowing it to soak up some of the mixture.
  5. Transfer the slices to the griddle and cook until golden brown, about 3-4 minutes per side.
  6. Repeat with all slices of bread until the mixture is used up.
  7. Serve warm with maple syrup, butter, and powdered sugar.
