Ingredients

The base

  • 5 ½ - 7 ½ cups 1-inch bread cubes

The batter

  • 7 large eggs
  • 2 cups milk
  • 1 tsp vanilla extract
  • 1 ½ tsp pumpkin pie spice
  • ¼ cup pumpkin butter
  • 3-4 Tbsp brown sugar

Optional toppings

  • Nuts (like pecan or walnuts)

Instructions

  1. Cut the bread into 1-inch cubes and fill a greased 9x13-inch baking dish.
  2. In a bowl, whisk together eggs, milk, vanilla, pumpkin butter, and pumpkin pie spice.
  3. Pour the mixture over the bread and press down to ensure it is soaked.
  4. Cover and refrigerate overnight.
  5. In the morning, preheat the oven to 350°F (176°C).
  6. Uncover, top with brown sugar, additional pumpkin pie spice, and nuts if desired.
  7. Bake for 35-45 minutes until golden brown and set.
  8. Serve immediately with maple syrup, honey, or agave nectar.
