  • tsp. sugar

Sauce and Assembly

  • 3 cloves garlic
  • 14 oz. crushed tomatoes
  • 6 Tbsp. extra-virgin olive oil
  • tsp. kosher salt
  • ½ tsp. sugar
  • ¼ tsp. crushed red pepper flakes
  • 10 oz. low-moisture mozzarella
  • to taste basil leaves

Instructions

  1. Mix yeast, bread flour, salt, sugar, and warm water in a bowl until a shaggy dough forms, then let it rest.
  2. Stretch the dough by folding it over itself multiple times, resting between folds until smooth.
  3. Divide the dough into two balls and let them rise until puffy.
  4. Prepare the sauce by simmering garlic, crushed tomatoes, olive oil, salt, sugar, and red pepper flakes until flavors meld.
  5. Roll out one dough ball into a round shape and cook it in a skillet until golden brown.
  6. Transfer the crust to a wire rack, add sauce and mozzarella, then broil until the cheese is melted and bubbly.
  7. Let the pizza cool slightly, then add basil and serve. Repeat with the second dough ball.
