Cauliflower Chicken Fried Rice

Instructions
- Cut the cauliflower florets, leaving most of the stem, and pulse in a food processor until fine bits are formed.
- Transfer the cauliflower to paper towels, wrap, and squeeze to remove excess moisture.
- Heat ½ Tbsp olive oil and ½ Tbsp sesame oil in a skillet over medium-high heat.
- Add the chicken and cook until done, about 6 minutes, then transfer to a plate.
- Add 1 Tbsp olive oil and ½ Tbsp sesame oil to the skillet, then add green onions, ginger, and garlic, and sauté for 20 seconds.
- Add the cauliflower rice and sauté for 3 minutes, then add peas and carrots and sauté until heated through.
- Push the mixture to the edges of the pan, add the remaining sesame oil to the center, then scramble the eggs until set.
- Return the chicken to the pan, pour soy sauce over everything, toss, and cook for 1 more minute.
- Serve warm with optional toppings.
