Cauliflower Chicken Fried Rice

Ingredients

The main ingredients

  • 1 large head cauliflower
  • 1 lb boneless, skinless chicken breasts
  • Tbsp olive oil
  • Tbsp sesame oil
  • ½ cup chopped green onions
  • 1 Tbsp fresh ginger
  • 1 Tbsp minced garlic
  • 2 cups frozen peas and carrots blend
  • 3 large eggs
  • Tbsp soy sauce

Optional toppings

  • cup chopped unsalted peanuts
  • 2 Tbsp chopped green onions
  • to taste Sriracha or thinly sliced red peppers

Instructions

  1. Cut the cauliflower florets, leaving most of the stem, and pulse in a food processor until fine bits are formed.
  2. Transfer the cauliflower to paper towels, wrap, and squeeze to remove excess moisture.
  3. Heat ½ Tbsp olive oil and ½ Tbsp sesame oil in a skillet over medium-high heat.
  4. Add the chicken and cook until done, about 6 minutes, then transfer to a plate.
  5. Add 1 Tbsp olive oil and ½ Tbsp sesame oil to the skillet, then add green onions, ginger, and garlic, and sauté for 20 seconds.
  6. Add the cauliflower rice and sauté for 3 minutes, then add peas and carrots and sauté until heated through.
  7. Push the mixture to the edges of the pan, add the remaining sesame oil to the center, then scramble the eggs until set.
  8. Return the chicken to the pan, pour soy sauce over everything, toss, and cook for 1 more minute.
  9. Serve warm with optional toppings.
