Cauliflower Chicken Fried Rice

Ingredients

  • 1 head cauliflower
  • 2 tablespoons sesame oil
  • 1 lb boneless chicken breast
  • 2 large eggs
  • 3 medium carrots
  • 1 medium onion
  • 2 cloves garlic
  • 1 tablespoon fresh ginger
  • 1 cup frozen sweet peas
  • cup tamari sauce or soy sauce
  • 1-2 teaspoons sriracha sauce
  • ¼ cup sliced green onions
  • to taste sesame seeds

Instructions

  1. Blend cauliflower florets until they resemble small grains of rice and set aside.
  2. Heat a wok or large skillet over medium-high heat and add 1 tablespoon of sesame oil.
  3. Add diced chicken and sauté for 4-5 minutes, then remove from the pan.
  4. Scramble the eggs in the same pan for 1 minute until cooked, then remove and set aside with the chicken.
  5. Add another tablespoon of sesame oil and stir-fry onions for 2 minutes until translucent.
  6. Add garlic, ginger, and diced carrots, and sauté for 4-5 minutes.
  7. Add the cauliflower rice, sweet peas, tamari sauce, and sriracha sauce, then toss and cook for 2 minutes.
  8. Return the chicken and eggs to the pan, mix together, and garnish with sesame seeds and green onions.
