Cauliflower Chicken Fried Rice

Instructions
- Blend cauliflower florets until they resemble small grains of rice and set aside.
- Heat a wok or large skillet over medium-high heat and add 1 tablespoon of sesame oil.
- Add diced chicken and sauté for 4-5 minutes, then remove from the pan.
- Scramble the eggs in the same pan for 1 minute until cooked, then remove and set aside with the chicken.
- Add another tablespoon of sesame oil and stir-fry onions for 2 minutes until translucent.
- Add garlic, ginger, and diced carrots, and sauté for 4-5 minutes.
- Add the cauliflower rice, sweet peas, tamari sauce, and sriracha sauce, then toss and cook for 2 minutes.
- Return the chicken and eggs to the pan, mix together, and garnish with sesame seeds and green onions.
