Cauliflower Fried Rice with Chicken

Instructions
- Heat 1 teaspoon of sesame oil in a skillet over medium-high heat and cook the whisked eggs until set on one side, then flip and cook briefly on the other side before chopping.
- Add 1 tablespoon of sesame oil to the skillet, sauté the green onions until softened, then add garlic and ginger and cook until fragrant.
- Season the chicken with salt, add it to the skillet, and stir-fry until mostly opaque.
- Add the mixed vegetables and cook until tender, then simmer until the liquid evaporates.
- Add the remaining sesame oil and cauliflower rice, cooking until the rice begins to soften.
- Stir in the cooked egg, soy sauce, red pepper flakes, and rice vinegar, and cook until most of the liquid evaporates.
- Garnish with green onions and sesame seeds before serving.
