Cauliflower Fried Rice with Chicken

Ingredients

The base

  • 3 large eggs
  • 1 cup green onions
  • 2 cloves garlic
  • ½ tablespoon fresh ginger
  • 4 cups cauliflower rice
  • 1 pound chicken breast
  • 1½ - 2 cups mixed vegetables

The seasonings

  • 4-5 tablespoons soy sauce
  • ¼ teaspoon red pepper flakes
  • ½ tablespoon rice vinegar
  • 2 tablespoons + 1 teaspoon sesame oil
  • salt to taste
  • sesame seeds for garnish

Instructions

  1. Heat 1 teaspoon of sesame oil in a skillet over medium-high heat and cook the whisked eggs until set on one side, then flip and cook briefly on the other side before chopping.
  2. Add 1 tablespoon of sesame oil to the skillet, sauté the green onions until softened, then add garlic and ginger and cook until fragrant.
  3. Season the chicken with salt, add it to the skillet, and stir-fry until mostly opaque.
  4. Add the mixed vegetables and cook until tender, then simmer until the liquid evaporates.
  5. Add the remaining sesame oil and cauliflower rice, cooking until the rice begins to soften.
  6. Stir in the cooked egg, soy sauce, red pepper flakes, and rice vinegar, and cook until most of the liquid evaporates.
  7. Garnish with green onions and sesame seeds before serving.
