Lightened Up Blue Cheese Dressing

Ingredients

  • 4 ounces blue cheese
  • 1 cup Greek yogurt, full fat
  • 1 clove garlic, minced
  • 2 teaspoons Worcestershire sauce
  • ¾ teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon ground mustard
  • 2 tablespoons fresh chives
  • 1 teaspoon lemon juice
  • to taste water or olive oil (to thin)

Instructions

  1. Crumble blue cheese into a bowl and mash it slightly.
  2. Add yogurt, garlic, Worcestershire sauce, salt, pepper, and ground mustard, then whisk well.
  3. Stir in fresh chives.
  4. Thin the dressing with water or olive oil to your desired consistency.
  5. Add lemon juice and adjust salt and pepper to taste.
