Cedar Planked Mahi Mahi with Coconut Lime Butter

Ingredients

The fish

  • 4 filets Mahi Mahi (or flaky white fish)

The rub and butter

  • 1 tbsp Sunshine State of Mind Craft BBQ Rub
  • 1 stick butter, room temperature
  • 1 tbsp unsweetened coconut
  • ½ tsp salt

The lime

  • 1 lime zest and juice

Instructions

  1. Soak the cedar planks for 30 minutes before using.
  2. Combine the butter with lime juice, zest, coconut, and salt.
  3. Place the mahi mahi skin-side down on each plank and smother with the compound butter.
  4. Preheat the grill to medium heat (about 400 degrees) with direct and indirect zones.
  5. Place the planks on the indirect side and cook until the internal temperature of the mahi mahi reaches 145 degrees.
  6. Serve immediately.
