Cedar Planked Mahi Mahi with Coconut Lime Butter

The lime
Instructions
- Soak the cedar planks for 30 minutes before using.
- Combine the butter with lime juice, zest, coconut, and salt.
- Place the mahi mahi skin-side down on each plank and smother with the compound butter.
- Preheat the grill to medium heat (about 400 degrees) with direct and indirect zones.
- Place the planks on the indirect side and cook until the internal temperature of the mahi mahi reaches 145 degrees.
- Serve immediately.
