Citrus Grilled Mahi Mahi

Ingredients

The fish and citrus

  • 4 filets Mahi Mahi
  • 2 large oranges
  • 3 large lemons
  • 2 large grapefruit

The seasoning and butter

  • 1–2 tbsp Sunshine State of Mind Craft BBQ Rub
  • 2 tbsp butter

Instructions

  1. 1. Preheat the grill for medium direct heat.
  2. 2. Slice the citrus into ¼ inch thick slices.
  3. 3. Place one pat of butter on each filet, about ½ tbsp each.
  4. 4. Generously apply the BBQ rub on each filet, about 1-2 teaspoons each.
  5. 5. Use tongs to layer the citrus slices on the grill as a platform for the fish.
  6. 6. Place the mahi mahi on the citrus and grill until the internal temperature reaches 145 degrees.
  7. 7. Remove from the grill and serve immediately.
