Ingredients

  • Cup Almond Flour
  • 2 Pieces Eggs
  • Cup Pumpkin Purée
  • ½ Cup Cottage Cheese
  • 1 Teaspoon Pumpkin Pie Spice
  • ½ Teaspoon Baking Soda
  • 1 Scoop Protein Powder (optional)

Instructions

  1. Add all ingredients to a food processor and pulse until smooth.
  2. Heat a pan over medium heat and spray with oil or cooking spray.
  3. Pour one scoop of batter into the pan and cook for 2-3 minutes before flipping.
  4. Repeat until all batter is used.
  5. Top with butter and maple syrup if desired, then serve.
