Ingredients

The pancake batter

  • 1 cup rolled oats
  • ¾ cup egg whites
  • ½ cup cottage cheese
  • ¼ cup pumpkin puree
  • 1 tbsp maple syrup
  • 1 tsp pumpkin pie spice

For cooking

  • as needed none coconut oil

Instructions

  1. Blend all ingredients until you have a thick pancake batter.
  2. Heat a nonstick skillet over medium heat and coat with coconut oil.
  3. Drop rounds of batter onto the skillet and cook until edges are bubbling.
  4. Flip the pancakes and cook for an additional two minutes until golden brown.
  5. Serve with your favorite toppings.
