Roasted Spaghetti Squash

Ingredients

The squash

  • 1 whole spaghetti squash (approx. 1.3 lbs)

The seasoning

  • 1 Tbsp olive oil
  • ½ tsp salt
  • 2 Tbsp salted butter

Instructions

  1. 1. Preheat the oven to 400°F and line a sheet pan with parchment paper.
  2. 2. Stabilize the squash on a cutting board with a towel and trim off ¼ inch from both ends.
  3. 3. Cut the squash in half lengthwise and scrape out the seeds with a spoon.
  4. 4. Brush olive oil on the cut sides and sprinkle with salt before placing them cut side down on the sheet pan.
  5. 5. Roast for 30 to 45 minutes until the skin is easily pierced with a fork.
  6. 6. Allow to cool, then scrape the flesh with a fork to create strands.
  7. 7. Dress with butter and serve.
