Roasted Spaghetti Squash

Instructions
- Preheat the oven to 400°F.
- Cut the spaghetti squash into 1-inch widthwise slices.
- Scoop out the seeds and inner strands.
- Brush both sides of the squash rings with olive oil and sprinkle with salt and pepper.
- Lay the squash rings on a baking sheet lined with parchment paper.
- Bake for 15 minutes, then flip the rings and bake for another 15 minutes.
- Use a fork to separate the strands from the peel.
