Ingredients

The peaches

  • 3 pieces fresh, very ripe peaches

The filling

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons pure maple syrup or honey
  • 1 tablespoon brandy, bourbon, or rum (optional)
  • 1 tablespoon coconut sugar or light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon kosher salt

For serving

  • to taste vanilla ice cream, Greek yogurt, or heavy cream

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish.
  2. Split the peaches in half and remove the pits, placing them cut-side up in the dish.
  3. In a bowl, mix olive oil, maple syrup, optional alcohol, coconut sugar, vanilla, cinnamon, and salt.
  4. Spoon the mixture into the peach halves, letting it overflow onto the sides.
  5. Bake the peaches for about 30 minutes until tender.
  6. Serve warm with your choice of ice cream, yogurt, or cream.
