Ingredients

The peach

  • 1 peach peach, cut in half, with the pit removed

The mixture

  • 2 teaspoons olive oil
  • ½ teaspoon vanilla extract
  • 1 teaspoon coconut sugar
  • 1 pinch flaky sea salt

For serving

  • 1 scoop vanilla ice cream

Instructions

  1. Wash the peach and slice it in half, removing the pit.
  2. Place the peach cut-side down in an air fryer basket or a glass baking dish.
  3. Preheat the oven or air fryer to 400°F.
  4. Cook the peach for 8 minutes in the air fryer or 12 minutes in the oven.
  5. While the peach is cooking, mix the olive oil, coconut sugar, and vanilla extract in a small bowl.
  6. Once the peach is done, flip it cut-side up and spoon the olive oil mixture into the crevice of each peach half.
  7. Return the peach to the air fryer for another 8 minutes or the oven for another 12 minutes.
  8. After cooking, allow the peach to cool slightly, then top with vanilla ice cream and drizzle with more olive oil if desired.
