Single Serving Olive Oil Baked Peach

Instructions
- Wash the peach and slice it in half, removing the pit.
- Place the peach cut-side down in an air fryer basket or a glass baking dish.
- Preheat the oven or air fryer to 400°F.
- Cook the peach for 8 minutes in the air fryer or 12 minutes in the oven.
- While the peach is cooking, mix the olive oil, coconut sugar, and vanilla extract in a small bowl.
- Once the peach is done, flip it cut-side up and spoon the olive oil mixture into the crevice of each peach half.
- Return the peach to the air fryer for another 8 minutes or the oven for another 12 minutes.
- After cooking, allow the peach to cool slightly, then top with vanilla ice cream and drizzle with more olive oil if desired.
