Pumpkin Pie Cookies

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, combine all ingredients and mix to form a thick batter. If using dark chocolate chips, fold them in last.
- Using a tablespoon or cookie scoop, drop the batter onto the lined baking sheet and flatten each mound with a wet fork.
- Bake for 12-15 minutes until the edges are golden. For softer cookies, remove at 12 minutes; for firmer cookies, bake closer to 15 minutes.
- Allow cookies to cool completely before removing from the baking sheet.
