Zucchini and Shrimp Stir-Fry

Ingredients

The stir-fry

  • tablespoons oil
  • 8 oz shrimp, shelled and deveined
  • 1 zucchini cut into rounds and then quarters
  • 3-4 pieces button mushrooms, cut into pieces
  • 3-4 pieces baby carrots, sliced
  • 5-6 slices ginger, peeled

The brown sauce

  • 1 tablespoon oyster sauce
  • 5 tablespoons water
  • 1 teaspoon sugar
  • ½ teaspoon sesame oil
  • 1 pinch salt

Instructions

  1. Mix all the ingredients for the brown sauce, stir well, and set aside.
  2. Heat up a pan, skillet, or wok and add the oil.
  3. Once the oil is heated, add the ginger and stir-fry until aromatic.
  4. Add the shrimp and stir-fry until the surface turns opaque.
  5. Add the zucchini, carrots, and mushrooms, and toss for about 30 seconds.
  6. Add the brown sauce, stirring it right before use, and stir to combine well.
  7. Once the sauce thickens, dish out and serve immediately with steamed rice.
