BBQ Chickpea Wraps with Ranch Dressing

Ingredients

The filling

  • cup cooked chickpeas
  • 3 tablespoons bbq sauce
  • 2 cups lettuce, washed, rinsed and chopped
  • 2 pieces roma tomatoes, finely chopped
  • Juice of 1 lime
  • 5 tablespoons Homemade Oil-Free Ranch Dressing

The wraps

  • 2 wraps

Instructions

  1. Heat chickpeas with 2 tablespoons of BBQ sauce in a small pot over medium heat for about 5 minutes until warm and sticky.
  2. Remove from heat and coat chickpeas with the remaining BBQ sauce.
  3. Heat a skillet with ½ teaspoon of oil over medium heat and warm each wrap for about 30 seconds on each side.
  4. Assemble each wrap with ⅓ cup of BBQ chickpeas, 1 cup of lettuce, 1 chopped roma tomato, the juice of ½ lime, and 2 ½ tablespoons of ranch dressing.
  5. Wrap up the ingredients, cut in half, and serve. Optionally, serve ranch dressing on the side.
