Ingredients

The cherries

  • 2 pounds fresh cherries
  • 1 tablespoon kirsch
  • 2 tablespoons sugar

The almond cream

  • 1 cup finely ground almonds
  • 8 tablespoons unsalted butter
  • 2 large eggs
  • 2 tablespoons heavy cream
  • 1 cup confectioners' sugar
  • several drops kirsch (optional)
  • several drops almond extract
  • to taste confectioners' sugar for dusting

The baking dish

  • 1 10 ½-inch round porcelain baking dish

Instructions

  1. Preheat the oven to 375°F.
  2. Butter the baking dish and set it aside.
  3. In a skillet, combine cherries, kirsch, and sugar. Cook over low heat for 5 minutes, then transfer to the baking dish.
  4. Prepare the almond cream by mixing almonds and butter until smooth, then add eggs, cream, and confectioners' sugar, whisking until thick and smooth. Mix in kirsch and almond extract.
  5. Pour the almond cream over the cherries in the baking dish.
  6. Bake for 20 to 25 minutes until firm and golden brown. Cool on a wire rack.
  7. Dust with confectioners' sugar and serve warm or at room temperature.
