Ingredients

The hummus

  • ½ cup sun-dried tomatoes
  • 1 15 oz. can chickpeas
  • 2-4 medium cloves garlic
  • ¼ cup tahini
  • 3 Tbsp lemon juice
  • ½-¾ tsp sea salt
  • 1 tsp dried oregano
  • 2-4 Tbsp olive oil
  • ¼-½ cup chickpea brine

Optional garnish

  • to taste olive oil
  • to taste toasted pine nuts
  • to taste smoked paprika

Instructions

  1. Soak the sun-dried tomatoes in warm water for 5 minutes, then drain.
  2. Drain the chickpeas, reserving the liquid.
  3. Add all ingredients to a food processor or blender, starting with the lesser amounts where ranges are provided.
  4. Blend until creamy and smooth, scraping down the sides as needed.
  5. Add more chickpea brine as needed for creaminess and adjust seasoning to taste.
  6. Transfer to a serving bowl and garnish with optional ingredients.
  7. Serve with pita, veggies, crackers, or as desired.
