Mini Key Lime Pie

Instructions
- Preheat the oven to 350ºF.
- Mix graham cracker crumbs, sugar, melted butter, and lime zest in a small bowl until combined.
- Place cupcake liners in cupcake tins and add 2 Tablespoons of the graham cracker mixture to each, pressing down.
- Bake for 8 minutes, then let cool completely.
- In a stand mixer, combine softened cream cheese, salt, and lime zest and mix until combined.
- Add the sweetened condensed milk and mix until smooth.
- Incorporate the egg yolk and key lime juice into the mixture.
- Pour the filling into the cooled graham cracker crusts, filling each ¾ full.
- Bake for 15 minutes at 350ºF.
- Remove from the oven and refrigerate for at least 30 minutes before serving, topping with fresh lime zest.
