Baked Plantain with Cheese

Ingredients

The plantains

  • 2-3 pieces Plantains

The toppings

  • 1 cup guacamole or 1 large avocado
  • 2 tablespoons canola oil or butter
  • 4-8 ounces thick slices of mozzarella or cheddar cheese

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets with foil and cooking spray or oil.
  2. Cut both ends off the plantains and make a shallow slit down the long seam to peel them.
  3. Place the plantains on the tray, lightly spray them, and bake for about 25 minutes.
  4. Turn the plantains and bake for another 15 minutes or until golden brown and tender.
  5. Remove the baked plantains from the oven and cool for a couple of minutes.
  6. Make a horizontal slit in the plantains and stuff them with cheese.
  7. Return the plantains to the oven for a couple of minutes until the cheese melts.
  8. Remove from the oven and serve immediately.
