Baked Plantain with Cheese

guacamole or 1 large avocado

canola oil or butter

thick slices of mozzarella or cheddar cheese
Instructions
- Preheat the oven to 400°F and prepare baking sheets with foil and cooking spray or oil.
- Cut both ends off the plantains and make a shallow slit down the long seam to peel them.
- Place the plantains on the tray, lightly spray them, and bake for about 25 minutes.
- Turn the plantains and bake for another 15 minutes or until golden brown and tender.
- Remove the baked plantains from the oven and cool for a couple of minutes.
- Make a horizontal slit in the plantains and stuff them with cheese.
- Return the plantains to the oven for a couple of minutes until the cheese melts.
- Remove from the oven and serve immediately.
