Baked Plantain Frittata

Instructions
- Preheat the oven to 350°F and grease a 10-inch baking pan.
- Prepare the plantains by cutting off both ends and peeling them, then slice into desired shapes.
- Arrange the sliced plantains on a baking sheet, spray lightly with canola oil, and bake for 12-20 minutes until golden brown.
- In a medium saucepan, heat canola oil and sauté onions, tomatoes, and green pepper for about 4-5 minutes.
- In a large bowl, whisk the eggs and add the sautéed vegetable mixture, seasoning with salt and pepper.
- Pour the egg mixture into the greased baking pan, layer the baked plantains on top, and sprinkle with parsley.
- Bake in the oven for about 30-40 minutes until the mixture is firm in the center.
- Let it cool for a few minutes, then top with avocado if desired.
