Baked Plantain Frittata

Ingredients

  • 2-3 pieces ripe plantains
  • 1 tablespoon canola oil
  • ½ medium onion, thinly sliced
  • 1 piece scotch bonnet pepper, diced (or hot sauce)
  • ½ piece red/green bell pepper, thinly sliced
  • 1 small tomato
  • 1 teaspoon minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon fresh thyme (or any herb)
  • to taste coarse salt and ground pepper
  • 6 large eggs
  • 1 piece avocado (optional)
  • ½ - 1 cup sausage, chopped

Instructions

  1. Preheat the oven to 350°F and grease a 10-inch baking pan.
  2. Prepare the plantains by cutting off both ends and peeling them, then slice into desired shapes.
  3. Arrange the sliced plantains on a baking sheet, spray lightly with canola oil, and bake for 12-20 minutes until golden brown.
  4. In a medium saucepan, heat canola oil and sauté onions, tomatoes, and green pepper for about 4-5 minutes.
  5. In a large bowl, whisk the eggs and add the sautéed vegetable mixture, seasoning with salt and pepper.
  6. Pour the egg mixture into the greased baking pan, layer the baked plantains on top, and sprinkle with parsley.
  7. Bake in the oven for about 30-40 minutes until the mixture is firm in the center.
  8. Let it cool for a few minutes, then top with avocado if desired.
