Instructions

  1. Line a medium-sized bowl with a tea towel or cheesecloth.
  2. Chop the cauliflower into small pieces and place them in a high-powered food processor, processing in batches if necessary.
  3. Pulse the cauliflower until it resembles small rice-sized pieces and pour it into the lined bowl.
  4. Add a pinch of salt to the cauliflower rice and stir, then let it sit for at least 15 minutes.
  5. Twist the top of the tea towel to strain excess moisture from the cauliflower rice.
