Instructions
- Prepare the Brussels sprouts, shallot, and bacon by slicing them appropriately.
- Toast the sliced almonds in a non-stick pan over medium heat until lightly browned.
- Cook the chopped bacon in the same pan until the fat is mostly rendered.
- Spoon some rendered bacon fat into a bowl and set aside to make the dressing.
- Mix the maple syrup, Dijon mustard, lemon juice, and seasonings into the bowl with the bacon fat to create the dressing.
- Return the pan to medium heat, add shallots, and cook until softened.
- Add the shredded Brussels sprouts to the pan and cook until they turn a darker shade of green.
- Transfer the mixture to a serving bowl and toss with the dressing, toasted almonds, and dried cranberries.
- Grate Parmesan cheese over the top and serve warm.
