Ingredients

The salad

  • 1 strip thick-cut Bacon
  • ¼ cup Shallot, thinly sliced
  • 8 oz. shredded / shaved Brussels Sprouts
  • ¼ cup toasted Sliced Almonds
  • 2 tbsp. Dried Cranberries
  • to taste Parmesan Cheese
  • to taste Salt
  • to taste freshly cracked Black Pepper

The dressing

  • 1 tsp. Rendered Bacon Fat
  • 2 tsp. Maple Syrup
  • 2 tsp. Dijon Mustard
  • 1 tsp. fresh Lemon Juice
  • 2 tsp. Extra Virgin Olive Oil
  • to taste Salt
  • to taste freshly cracked Black Pepper

Instructions

  1. Prepare the Brussels sprouts, shallot, and bacon by slicing them appropriately.
  2. Toast the sliced almonds in a non-stick pan over medium heat until lightly browned.
  3. Cook the chopped bacon in the same pan until the fat is mostly rendered.
  4. Spoon some rendered bacon fat into a bowl and set aside to make the dressing.
  5. Mix the maple syrup, Dijon mustard, lemon juice, and seasonings into the bowl with the bacon fat to create the dressing.
  6. Return the pan to medium heat, add shallots, and cook until softened.
  7. Add the shredded Brussels sprouts to the pan and cook until they turn a darker shade of green.
  8. Transfer the mixture to a serving bowl and toss with the dressing, toasted almonds, and dried cranberries.
  9. Grate Parmesan cheese over the top and serve warm.
