Warm Brussels Sprouts Salad with Bacon, Farro, and Blue Cheese

Instructions
- Prepare the farro according to package instructions and set aside.
- Preheat the oven to 400°F and prepare the Brussels sprouts by trimming and halving them.
- Toss the Brussels sprouts with olive oil, salt, and pepper, then spread them on a baking sheet and roast for 35-40 minutes.
- Cook the bacon until crispy, then chop it into pieces.
- In a skillet, toast the walnuts in olive oil until fragrant, then add the cooked farro, remaining salt, and pepper, and stir until heated.
- Drizzle the farro mixture with maple syrup and balsamic vinegar, then add the roasted Brussels sprouts and bacon, and stir to combine.
- Remove from heat and stir in half of the blue cheese until melted, then top with the remaining cheese and parsley before serving.
