Warm Brussels Sprouts Salad with Bacon, Farro, and Blue Cheese

Ingredients

  • 1 cup farro
  • 1 ½ pounds Brussels sprouts
  • 4 tablespoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • ¾ teaspoon ground black pepper
  • 3 slices thick-cut bacon
  • ½ cup roughly chopped walnuts
  • 3 tablespoons pure maple syrup
  • 2 tablespoons balsamic vinegar
  • ¾ cup crumbled Gorgonzola or other mild blue cheese
  • ¼ cup chopped fresh parsley

Instructions

  1. Prepare the farro according to package instructions and set aside.
  2. Preheat the oven to 400°F and prepare the Brussels sprouts by trimming and halving them.
  3. Toss the Brussels sprouts with olive oil, salt, and pepper, then spread them on a baking sheet and roast for 35-40 minutes.
  4. Cook the bacon until crispy, then chop it into pieces.
  5. In a skillet, toast the walnuts in olive oil until fragrant, then add the cooked farro, remaining salt, and pepper, and stir until heated.
  6. Drizzle the farro mixture with maple syrup and balsamic vinegar, then add the roasted Brussels sprouts and bacon, and stir to combine.
  7. Remove from heat and stir in half of the blue cheese until melted, then top with the remaining cheese and parsley before serving.
