Caramelized Brussels Sprout Salad

Ingredients

The salad

  • 4 slices thick-cut bacon, chopped
  • 1 tablespoon olive oil
  • 1 clove garlic, minced or grated
  • 1 pound brussels sprouts, stems removed and sliced
  • ½ small onion, chopped
  • 3 tablespoons brown sugar
  • ¼ teaspoon sea salt
  • ½ green apple, chopped
  • 2 honeycrisp apples, thinly sliced
  • 1 DeLallo Vibrant Blue SaladSavors® salad topping

Caramel Apple Vinaigrette

  • 2 cups apple cider
  • cup brown sugar
  • ½ green apple, finely chopped
  • 1 tablespoon apple cider vinegar
  • 4 leaves sage, chopped
  • ½ cup olive oil
  • 1 pinch cayenne pepper
  • to taste salt and pepper

Instructions

  1. Cook the bacon in a large skillet until crispy, then remove and drain on paper towels.
  2. Remove excess bacon fat from the pan, leaving one tablespoon, and heat olive oil.
  3. Sauté garlic for 30 seconds, then add brussels sprouts and onions, sprinkling with brown sugar and salt.
  4. Cook for 4-5 minutes until bright green and tender, then add the apples and cook for another 3-5 minutes.
  5. Stir in the pecans and dried cherries, then divide the salad among plates.
  6. Top with blue cheese, crispy bacon, and drizzle with caramel apple vinaigrette.
  7. For the vinaigrette, boil apple cider, brown sugar, and chopped apples until reduced to about ½ cup.
  8. Remove from heat, add vinegar and sage, then blend with olive oil, cayenne, salt, and pepper.
