Instructions
- Cook the bacon in a large skillet until crispy, then remove and drain on paper towels.
- Remove excess bacon fat from the pan, leaving one tablespoon, and heat olive oil.
- Sauté garlic for 30 seconds, then add brussels sprouts and onions, sprinkling with brown sugar and salt.
- Cook for 4-5 minutes until bright green and tender, then add the apples and cook for another 3-5 minutes.
- Stir in the pecans and dried cherries, then divide the salad among plates.
- Top with blue cheese, crispy bacon, and drizzle with caramel apple vinaigrette.
- For the vinaigrette, boil apple cider, brown sugar, and chopped apples until reduced to about ½ cup.
- Remove from heat, add vinegar and sage, then blend with olive oil, cayenne, salt, and pepper.
