Instructions
- Preheat the oven to 350°F and prepare an 8×8 baking dish with parchment paper or oil.
- In a large bowl, mix the eggs, coconut sugar, melted coconut oil, and vanilla.
- In a separate bowl, combine almond flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and stir until fully combined.
- Pour the batter into the prepared dish and bake for 15-18 minutes or until a toothpick comes out clean.
- Allow the brownies to cool for 10 minutes while preparing the pecan topping.
- In a saucepan, heat melted coconut oil, coconut sugar, maple syrup, and vanilla until boiling, stirring constantly for about 3-4 minutes.
- Once boiling, continue stirring and let bubble for one minute, then turn off the heat.
- Stir in almond milk and chopped pecans.
- Pour the pecan mixture over the cooled brownie layer and bake for an additional 20-22 minutes.
- Let cool on the counter for 15 minutes, then refrigerate for at least two hours before cutting.
