Ingredients

Brownie Layer

  • 2 eggs eggs
  • ½ cup coconut sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla
  • ¾ cup almond flour
  • cup cocoa powder
  • ¼ tsp baking soda
  • ¼ tsp sea salt

Pecan Pie Filling

  • ½ cup melted coconut oil
  • ¼ cup maple syrup
  • cup coconut sugar
  • 1 tsp vanilla
  • 1 tbsp almond milk
  • 2 cups chopped pecans

Instructions

  1. Preheat the oven to 350°F and prepare an 8×8 baking dish with parchment paper or oil.
  2. In a large bowl, mix the eggs, coconut sugar, melted coconut oil, and vanilla.
  3. In a separate bowl, combine almond flour, cocoa powder, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and stir until fully combined.
  5. Pour the batter into the prepared dish and bake for 15-18 minutes or until a toothpick comes out clean.
  6. Allow the brownies to cool for 10 minutes while preparing the pecan topping.
  7. In a saucepan, heat melted coconut oil, coconut sugar, maple syrup, and vanilla until boiling, stirring constantly for about 3-4 minutes.
  8. Once boiling, continue stirring and let bubble for one minute, then turn off the heat.
  9. Stir in almond milk and chopped pecans.
  10. Pour the pecan mixture over the cooled brownie layer and bake for an additional 20-22 minutes.
  11. Let cool on the counter for 15 minutes, then refrigerate for at least two hours before cutting.
