Blackened Chicken

whole chicken, split into two halves

mixed blackened seasoning

vegetable oil
Instructions
- Mix all the seasonings for the Cajun-Italian Blackening Seasoning in a small bowl and store in an airtight container.
- Preheat the oven to 400 degrees Fahrenheit.
- Coat the skin side of the chicken with the blackening seasoning and set aside.
- Heat a large skillet over medium-high heat, add the vegetable oil, and place the chicken halves skin side down.
- Press the chicken down into the pan and cover, cooking for 8-10 minutes until seared.
- Transfer the chicken to a baking dish on a rack and bake for about 40 minutes until the internal temperature reaches at least 165 degrees Fahrenheit.
- Allow the chicken to rest for 10 minutes before slicing.
