Ingredients

Cajun-Italian Blackening Seasoning

  • 4 teaspoons coarse sea salt
  • 4 teaspoons dried marjoram
  • 4 teaspoons ground nutmeg
  • 4 teaspoons fennel seed
  • 2 teaspoons granulated onion
  • 2 teaspoons black pepper
  • 2 teaspoons smoked sweet paprika
  • 2 teaspoons allspice
  • 1 teaspoon granulated garlic
  • 1 teaspoon ground mustard seed

Blackened Chicken

  • 3 pounds whole chicken, split into two halves
  • 3-4 tablespoons mixed blackened seasoning
  • 2 tablespoons vegetable oil

Instructions

  1. Mix all the seasonings for the Cajun-Italian Blackening Seasoning in a small bowl and store in an airtight container.
  2. Preheat the oven to 400 degrees Fahrenheit.
  3. Coat the skin side of the chicken with the blackening seasoning and set aside.
  4. Heat a large skillet over medium-high heat, add the vegetable oil, and place the chicken halves skin side down.
  5. Press the chicken down into the pan and cover, cooking for 8-10 minutes until seared.
  6. Transfer the chicken to a baking dish on a rack and bake for about 40 minutes until the internal temperature reaches at least 165 degrees Fahrenheit.
  7. Allow the chicken to rest for 10 minutes before slicing.
