Caramelized Pork and Cucumber Stir-Fry

Ingredients

The stir-fry

  • 1 large slicing cucumber
  • 1 lb ground pork
  • 1 Fresno chile Fresno chile
  • 1 1-inch piece ginger
  • 2 cloves garlic
  • ½ tsp freshly ground white or black pepper

The sauces

  • 2 Tbsp oyster sauce
  • 2 Tbsp soy sauce
  • 2 Tbsp Shaoxing wine or medium-dry sherry

The cooking oil

  • 3 Tbsp grapeseed or vegetable oil

The seasoning

  • 1 tsp Diamond Crystal or ½ tsp. Morton kosher salt

For serving

  • as needed steamed white rice

Instructions

  1. 1. Toss cucumber slices with salt and let sit for about 10 minutes to release liquid.
  2. 2. Combine oyster sauce, soy sauce, and Shaoxing wine in a small bowl and set aside.
  3. 3. Form the ground pork into five or six small patties and season lightly with salt.
  4. 4. Drain and rinse the cucumber slices, then pat them dry.
  5. 5. Heat 1 Tbsp of oil in a skillet and cook the cucumber slices until crisp-tender.
  6. 6. Wipe the skillet, heat the remaining oil, and cook the pork patties until browned and crisp on both sides, then break them up.
  7. 7. Add the chile, ginger, garlic, and pepper to the pork and cook until fragrant.
  8. 8. Return the cucumber to the skillet, add the sauce, and toss until everything is coated and heated through.
  9. 9. Serve the stir-fry with steamed rice.
