Caramelized Pork and Cucumber Stir-Fry

Instructions
- 1. Toss cucumber slices with salt and let sit for about 10 minutes to release liquid.
- 2. Combine oyster sauce, soy sauce, and Shaoxing wine in a small bowl and set aside.
- 3. Form the ground pork into five or six small patties and season lightly with salt.
- 4. Drain and rinse the cucumber slices, then pat them dry.
- 5. Heat 1 Tbsp of oil in a skillet and cook the cucumber slices until crisp-tender.
- 6. Wipe the skillet, heat the remaining oil, and cook the pork patties until browned and crisp on both sides, then break them up.
- 7. Add the chile, ginger, garlic, and pepper to the pork and cook until fragrant.
- 8. Return the cucumber to the skillet, add the sauce, and toss until everything is coated and heated through.
- 9. Serve the stir-fry with steamed rice.
