Sweet Asian Chili Pork Stir Fry

Ingredients

The stir fry

  • 2 tablespoons sesame oil
  • 1 pound pork tenderloin, sliced thin
  • 2 tablespoons fresh ginger, minced or grated
  • 2 red bell peppers sliced thin
  • cups sweet thai chile sauce
  • ¼ cup soy sauce
  • ¼ teaspoon ground cloves
  • ½ teaspoon cinnamon
  • ¼ teaspoon pepper
  • 2 bunches bok choy, chopped
  • 2 in tangerines, peeled and wedged
  • to taste scallions or green onions, for garnish
  • to taste toasted sesame seeds, for garnish

Toasted Sesame Rice

  • 1 cup uncooked jasmine rice
  • 2 cups water
  • 1 tablespoon toasted sesame oil
  • ¼ cup toasted sesame seeds

Instructions

  1. Toast sesame seeds in a skillet over medium heat until fragrant.
  2. In a pot, bring water to a boil, add rice and sesame oil, cover, and reduce heat to low for 10 minutes.
  3. Turn off heat and let rice sit covered for 20 minutes.
  4. Fluff rice with a fork and stir in toasted sesame seeds.
  5. In a large skillet, heat sesame oil and cook pork in batches until caramelized.
  6. Remove pork and stir fry red peppers until softened.
  7. Add pork back to skillet with ginger and stir fry briefly.
  8. Stir in sweet thai chile sauce, soy sauce, cloves, cinnamon, and pepper, cooking until sauce thickens.
  9. Add bok choy and cook for another minute, then stir in tangerines.
  10. Serve stir fry over rice and garnish with green onions and sesame seeds.
