Ingredients

The salad

  • 10 oz cooked, chilled lobster meat
  • 2 cups baby greens
  • 2 oz avocado, diced
  • 2 whole hard boiled eggs, sliced
  • 4 slices center cut bacon, cooked and crumbled
  • ½ cup quartered grape tomatoes
  • ½ cup cooked corn kernels

The vinaigrette

  • 1 tsp dijon mustard
  • 4 tsp olive oil
  • 2 tbsp red wine vinegar
  • ¼ tsp kosher salt
  • 2 tbsp chopped red onion

Instructions

  1. Whisk together the ingredients for the vinaigrette in a small bowl and set aside.
  2. Cut the lobster into large chunks.
  3. In each bowl, place 1 cup of greens and top with lobster, avocado, eggs, bacon, tomatoes, and corn.
  4. Drizzle the vinaigrette over each salad and enjoy.
