Wonton Meatballs

Ingredients

The meat mixture

  • ½ pound shrimp, peeled and deveined
  • 1 pound ground pork

The flavorings

  • ¼ ounce dried shiitake mushrooms, soaked in water
  • 2 tablespoons scallions, finely chopped
  • ¼ cup cilantro, minced
  • 1 tablespoon coconut aminos
  • ½ teaspoon Diamond Crystal kosher salt
  • ½ teaspoon fish sauce
  • ¼ teaspoon ground white pepper
  • ¼ teaspoon toasted sesame oil

Cooking fats and optional ingredients

  • 1 tablespoon ghee or cooking fat of choice
  • Sriracha (optional)
  • 1 scallion sliced on the bias (optional garnish)

Instructions

  1. Soak the dried shiitake mushrooms in water until hydrated.
  2. Preheat the oven to 400°F and squeeze the water out of the shiitake mushrooms, then mince them.
  3. Chop the shrimp into a chunky paste and place it in a large bowl.
  4. Add the ground pork, minced mushrooms, scallions, cilantro, coconut aminos, salt, fish sauce, white pepper, and sesame oil to the bowl.
  5. Mix the meatball mixture until it becomes sticky and tacky.
  6. Heat a small frying pan over medium heat and add some cooking fat.
  7. Form a small patty from the mixture and cook it to check the seasoning, adjusting if necessary.
  8. Shape the mixture into 1½-inch balls and arrange them on a parchment-lined baking sheet.
  9. Bake the meatballs for 15-20 minutes or until cooked through.
  10. Serve topped with scallions and optional Sriracha.
