Wonton Meatballs

Instructions
- Soak the dried shiitake mushrooms in water until hydrated.
- Preheat the oven to 400°F and squeeze the water out of the shiitake mushrooms, then mince them.
- Chop the shrimp into a chunky paste and place it in a large bowl.
- Add the ground pork, minced mushrooms, scallions, cilantro, coconut aminos, salt, fish sauce, white pepper, and sesame oil to the bowl.
- Mix the meatball mixture until it becomes sticky and tacky.
- Heat a small frying pan over medium heat and add some cooking fat.
- Form a small patty from the mixture and cook it to check the seasoning, adjusting if necessary.
- Shape the mixture into 1½-inch balls and arrange them on a parchment-lined baking sheet.
- Bake the meatballs for 15-20 minutes or until cooked through.
- Serve topped with scallions and optional Sriracha.
