Ingredients

The meatballs

  • 1 pound ground pork or ground chicken
  • cup breadcrumbs
  • 2 tablespoons parmesan cheese, freshly grated
  • 3 tablespoons olive oil, divided
  • 1 large egg
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon paprika
  • 1 tablespoon parsley, freshly chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

The firecracker sauce

  • ¼ cup buffalo sauce
  • ¼ cup brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon ginger, minced
  • 1 clove garlic, minced
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 2 tablespoons rice wine vinegar or apple cider vinegar

Instructions

  1. Mix the ground meat with breadcrumbs, parmesan, one tablespoon of olive oil, egg, and spices in a large bowl, then knead and form into small meatballs.
  2. Mix the sauce ingredients in a separate bowl and set aside.
  3. Heat the remaining two tablespoons of oil in a skillet and add the meatballs, cooking until browned on all sides.
  4. Add the sauce to the skillet and stir the meatballs to soak it up, cooking for 2-3 minutes until the sauce thickens.
  5. Remove from heat and serve the meatballs immediately.
