Lemon Ginger Meatballs

Ingredients

  • 1 pound ground pork
  • 4 pieces shiitake mushrooms, stemmed and minced
  • 1 tablespoon minced fresh mint leaves
  • 1 tablespoon minced fresh basil leaves
  • 1 tablespoon minced fresh Italian parsley
  • 1 piece egg white (optional)
  • teaspoons grated fresh ginger
  • ¼ teaspoon ground ginger (optional)
  • 2 teaspoons grated lemon zest
  • ½ teaspoon Diamond Crystal kosher salt
  • to taste none freshly ground black pepper
  • to taste none freshly chopped herbs (optional garnish)

Instructions

  1. Preheat the oven to 425°F with the rack in the middle.
  2. In a large bowl, combine the ground pork, minced mushrooms, herbs, and egg white if using.
  3. Add grated ginger, lemon zest, salt, and pepper to the mixture and mix well without overworking the meat.
  4. Divide the mixture into 1½ tablespoon portions and roll them into balls.
  5. Place the meatballs on a parchment-lined baking sheet, ensuring they are evenly spaced.
  6. Bake in the oven for 12-15 minutes or until cooked through.
  7. Garnish with freshly chopped herbs and serve.
