Instructions
- Preheat the oven to 425°F with the rack in the middle.
- In a large bowl, combine the ground pork, minced mushrooms, herbs, and egg white if using.
- Add grated ginger, lemon zest, salt, and pepper to the mixture and mix well without overworking the meat.
- Divide the mixture into 1½ tablespoon portions and roll them into balls.
- Place the meatballs on a parchment-lined baking sheet, ensuring they are evenly spaced.
- Bake in the oven for 12-15 minutes or until cooked through.
- Garnish with freshly chopped herbs and serve.
