Maple Mustard Salmon with Roasted Broccoli

Ingredients

The salmon and sauce

  • 1 to 1 ½ pounds fresh salmon, cut into 4 filets
  • 3 tablespoons pure maple syrup
  • 3 tablespoons Dijon mustard

The broccoli

  • 1 large head broccoli, cut into florets (about 4 cups)
  • 1-2 tablespoons oil
  • to taste coarse salt and ground black pepper

Instructions

  1. Preheat the oven to 400°F and coat a baking dish with cooking spray.
  2. Add broccoli to the baking dish, coat with oil, and season with salt and pepper. Toss to coat.
  3. Roast the broccoli for 8-10 minutes.
  4. Remove the baking dish from the oven, slide the broccoli over, and place the salmon filets in the dish. Season the salmon with salt and pepper.
  5. In a small bowl, whisk together maple syrup and Dijon mustard. Pour about ¾ of this mixture over the salmon filets.
  6. Roast the salmon and broccoli for another 8-10 minutes, until the salmon flakes easily.
  7. Optionally, broil on low for 2 additional minutes for a crispy top.
  8. Serve the salmon and broccoli with the remaining maple mustard sauce.
