Maple Mustard Salmon with Roasted Broccoli

The salmon and sauce

fresh salmon, cut into 4 filets

pure maple syrup

Dijon mustard
The broccoli

large head
broccoli, cut into florets (about 4 cups)

oil

coarse salt and ground black pepper
Instructions
- Preheat the oven to 400°F and coat a baking dish with cooking spray.
- Add broccoli to the baking dish, coat with oil, and season with salt and pepper. Toss to coat.
- Roast the broccoli for 8-10 minutes.
- Remove the baking dish from the oven, slide the broccoli over, and place the salmon filets in the dish. Season the salmon with salt and pepper.
- In a small bowl, whisk together maple syrup and Dijon mustard. Pour about ¾ of this mixture over the salmon filets.
- Roast the salmon and broccoli for another 8-10 minutes, until the salmon flakes easily.
- Optionally, broil on low for 2 additional minutes for a crispy top.
- Serve the salmon and broccoli with the remaining maple mustard sauce.
